Nacho Night

We have discovered the perfect nacho. You know how when you order nachos at a restaurant you get some that are loaded with all the good stuff and then there are the dud chips that missed out on all the good stuff? Well, Matt has found a solution to this age old problem. Friday night was nacho night and it started with throwing some chicken in the crock pot and starting a pot of Matt's famous beans (YUM!). When the chicken was cooked he shredded the meat and then started loading the chips. We bought the scoop tortilla chips and individually loaded each chip with beans and chicken and then sprinkled cheese on top. DELICIOUS! Add some sour cream, salsa and guacamole and you are good to go.

We had this on Friday night, but the meal was so good that we invited some friends over on Sunday and repeated the process all over again. This is just one more recipe we can add to Matt's cook book. I think we should open a restaurant, in the meantime we'll settle for feeding our friends and family. Who wants to come over for the next "Nacho Night"?

Holy Cow! I am salivating! You know how we Rasmussens take our Mexican food very seriously. Thanks for the tip. We'd love to invite ourselves over for nachos and homemade burritos anytime!
